I remember when I first started to read fashion blogs, some, oh er let me think, 6/7 years ago now, I used to be utterly disgusted if anybody dare put up a recipe! I wanted to see clothes, what women were wearing, what they wanted to wear, not what they had eaten for dinner the night before, but oh how things change.
Over the years I have been inspired by as many recipes as I have outfit posts, bought cook/tableware on the basis of a fashion bloggers recommendation, salivated over meals on instagram and ever since I attended the Deliciously Healthy Kitchen Cookery Course back in January, I have been keeping an eye out for recipes that are both healthy and tasty that would make a welcome change from Spag Bol (not really, it's my favourite) and give us as a family the opportunity to eat something more healthy than the old fashioned stodge/comfort food we live on (homemade chicken pie anyone?) at least a couple times a week.
Now don't be fooled into thinking that I shall be giving up cake and quiche or indeed my favourite cheese scones from the Sainsburys instore bakery any time soon. I still hate the taste of olives and feta cheese and won't be dipping bread into olive oil for as long as I live (I'm afraid I agree with Micky Flanagan on that one) but having always been a bit of a foodie, I am open to fresh idea's and with the peri-menopausal weight gain still in full swing, if those healthy meals happen to be low in calories, so much the better!
I managed to catch some of the Miami Beach Diet featured on Lorraine a few weeks ago and one recipe in particular caught my attention, especially as it contained Quinoa, a healthy protein packed rice/pasta/potato substitute which I have grown to love since my cookery course.
I have to confess to never buying Turkey Mince before but really fancied trying out these Kebabs using a more healthy meat alternative, lemon juice, chopped parsley and cumin especially as the whole meal works out less than 400 calories.
Check out the recipe and method here but just a little tip for cooking the Quinoa - ignore the recipe and ignore the packet instructions. Put your Quinoa in a saucepan and cover with 2 cms of water, bring to the boil and continue to boil for 5 mins. Turn off heat, cover with a lid, leave for a further 5 mins and fluff up with a fork. I think this was why I hated it before, overcooked!
The kebabs are also great BBQ food and perfect for Dukan dieters whose meat overload can get extremely boring.
